He later relocated to Seattle where he opened his award-winning restaurant Mashiko in 1994. In 2009, Hajime became one of the first sushi chefs to commit to using sustainable seafood. When Hajime relocated in 2019, several of his former employees took over Mashiko. Hajime opened Sozai in 2021, where he delighted Detroit area diners until 2025.
