We are delighted to share ingredients from around the globe, but we have a special appreciation for those we source from local farms and fisheries. Sazanami is proud to serve sustainable seafood with a close eye on traceability, fish populations, fishing methods, and farming practices.

Hajime’s sense of adventure led him to leave Japan for a year to be an exchange student in Coeur d’Alene, Idaho. He later relocated to Seattle where he opened his award-winning restaurant Mashiko in 1994. In 2009, Hajime became one of the first sushi chefs to commit to using sustainable seafood. When Hajime relocated in 2019, several of his former employees took over Mashiko. Hajime opened Sozai in 2021, where he delighted Detroit area diners until 2025. Now that Hajime has returned to the Pacific Northwest, he is excited to share his experience and passion with everyone at Sazanami!
